2 ripe bananas
1 egg
3/4 cup sugar
1/4 cup cooking oil
1/4 tsp ground cinnamon
1 1/2 tsp baking powder
1/4 tep baking soda
1 1/2 cups flour
1/2 cup brownie mix
Mash the bananas in a large bowl. Add all other ingredients except for flour. Blend with blender about 1 minute. Add flour slowly while mixing. After adding flour. Slowly add brownie mix and mix with beaters about 1 minute. Pour batter into cupcake tins. Bake at 350 for about 30 minutes or until puffy and done.
While the cupcakes are baking you can make the frosting.
8 oz. Cream Cheese softened
1 tablespoon milk
1/3 cup sugar
1/3 cup confectioner’s sugar
Mix with beaters until smooth. On a cookie sheet spread some flaked coconut and place in oven to toast. Watch them carefully once they start toasting you only have a few minutes until they burn. When the coconut has cooled add it to the frosting and stir it in. Top cooled cupcakes with frosting.
These are wonderfully rich and they have just a hint of chocolate. Yum!
