Creating weekly Aldi dinner recipes and shopping lists has been at the top of my to do list for a long time. It’s one of those things that I know will save me time in the long run (so I don’t have to re-do it every week), but I just haven’t done it yet. Well, time to work smarter, not harder!
I’ll include prices, but these change so the total will really only be an estimate of what you would spend if you follow along, and of course if you already have some of the items you can cut your costs. As a side note, I have kids who are not fans of anything too spicy, so a few of the recipes might seem bland. Feel free to add your own spices and flavorings if you try it and decide it needs more oomph.
The Recipes
(We usually have leftovers two days a week)
One Pot Tortellini and Sausage in Tomato Cream Sauce

Ingredients
- 1 lb Turkey smoked sausage
- 20 oz Tortellini
- 28 oz Basil, Garlic and Oregano Diced Tomatoes
- 1 cup Chicken Broth I make mine by dissolving a cube of chicken bouillon in a cup of water
- 6 Tbsp Cream Cheese
- 2 Cups Shredded Cheese We like Colby
- 1 Tbsp Olive Oil

Slice the sausage. Put olive oil in large skillet, add sausage and cook until browned. Add Chicken broth, tortellini, tomatoes and bring to a boil, stirring often. Turn heat to low, cover and simmer for about 15 minutes or until pasta is cooked. Remove from heat and add cheeses. Cover and let stand for five to ten minutes. Serve hot.
Potato Cheese Soup
Super simple basic potatoe cheese soup recipe which make it easy to add extras into like bacon or ground beef. This recipe makes a ton, but freezes really well, so I always save half for another meal.
Ingredients
- 8 Cups Water
- 6 cubes Chicken Bouillon Cubes
- 1.5 Cubes Butter
- 8 oz Cheddar Cheese
- 3/4 Cups flour
- 6 Potatoes Large baking potatoes

Wash, peel and cut potatoes into cubes. Bring to a boil water and chicken cubes. Add vegetables. Melt butter in small pan on low heat. Add flour and stir. Stir flour and butter mixture into boiling water with potatoes. Stir until smooth (I usually have to use a whisk) and thick. Add cheese. Stir until melted.
Taco Ring
This is a favorite meal at our house, so we eat it at least a couple times a month. I also always have taco meat already cooked and in the freezer so this is a fast weekday meal for us.
Ingredients
- 2 tubes Croissants
- 1/2 cup Salsa
- 1 can Tomato Sauce
- 1 lb Cooked Ground Turkey Drained you can use ground hamburger, but it tends to have more grease which makes the croissants wet, so I prefer the turkey
- 1 cup shredded Cheese
Instructions

Preheat oven to 375 degrees. Add salsa and tomato sauce into ground turkey. Spray cookie sheet with cooking spray. Unroll and separate the croissants. Place the wide end of the croissant about three inches from the edge of the cookie sheet, the thin edge may hang off the side. Overlap the dough so that there are no open spots, pushing it together as need and form into a circle. Spoon meat mixture onto croissants. Put shredded cheese on top of meat. Bring the small point of the croissant up and place over the meat mixture. Bake until croissants are golden brown, about 10-15 minutes. (Makes two rings)
Chicken and Broccoli Alfredo
Ingredients
- 1/2 pkg Spaghetti or Alfredo
- 1 Cup Frozen Broccoli
- 2 tbsp butter
- 1 lb. Chicken cooked and cubed
- 1 can Cream of Mushroom
- 1/2 Cup Milk
- 1/2 Cup Parmesan Cheese
- 1/4 tsp pepper

Cook noodles according to package directions. Add broccoli for last 4 minutes of cooking time. Drain. Add soup, milk, cheese, pepper, and chicken heat through.
Pancakes (no recipe required, just follow the recipe on the box. We love breakfast for dinner!)
