I shoot for trying out at least one new recipe a week. There certainly is no shortage of inspiration especially with the internet.

We recently tried these:

Sweet Potato, Black Bean and Kale Quesidillas (click image to go to recipe)

We really enjoyed them. I didn’t tell my 6 year what was in them, he might not have tried them if I had, but he had 4 of them and that is a lot for him. He even voted to have it become a part of our regular dinner rotation. We have tons of Kale coming up in the garden so I was looking for something to use it in. Extra bonus this meal is meatless, which means it’s good for your pocketbook and your health.

A National Cancer Institute study of 500,000 people found that those who ate 4 ounces (113 grams) of red meat or more daily were 30 percent more likely to have died of any cause during a 10-year period than were those who consumed less. Sausage, luncheon meats and other processed meats also increased the risk. Those who ate mostly poultry or fish had a lower risk of death.

I’m a fan of being alive. All joking aside, I am also responsible for helping my kids create healthy habits and the more often they are introduced to healthy foods the more likely they are to continue eating healthy foods.

We’ve also recently tried this spin on pizza. Everyone liked it (no big surprise there, we love pizza).

Hummus and Chicken Wraps

I had a ton of tomatoes and basil coming up in the garden so I made bruschetta and used that instead of the peppers and basil. I also don’t add cheese. Oh my goodness it is so good! I’ve been keeping some chicken from a rotisserie chicken in the fridge just so I can have one of these everyday for lunch.
