banana cake cookies

This recipe is so, so easy there is no excuse for ever throwing away an overripe banana.

Banana Cake Cookies
Makes about 2 dozen

1 box yellow cake mix
3 ripe medium bananas
1 egg

Mix all ingredients together. You should have a dough that is a little bit more runny than chocolate chip cookie dough. Depending on how big your bananas are you might have to add a little flour. I added about a half a cup to mine to get the right consistency. Add chocolate chips. We’ve also had them with butterscotch chips and white chocolate which are equally tasty!

Bake at 375 degrees for 10-12 minutes until they are golden brown on the edges and tops.

Enjoy! While cookies aren’t the healthiest thing in the world these are at least healthier since the bananas replace butter/shortening.
