Quick dinners

Meatballs are a great item to stock in your freezer for quick meals. You can get them from the freezer section at the store, but I’ve found it is more cost effective to make them (and it is easier to avoid food allergies). If neither of those are an issue for you, go ahead and grab 3 bags the next time you are at the grocery store. The recipe I use is versatile, I don’t add a ton of seasonings that will make it hard to use them in different recipes.

Versatile Baked Meatballs

Ingredients

  • 3 LB Ground Turkey Ground beef can also be used
  • 4 eggs
  • 2 Cups Bread Crumbs
  • 3 Tablespoons Dried Parsley
  • 1 Tablespoon Thyme
  • 1 Tablespoon Pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Line cookie sheets with foil for easier clean up.

  3. Combine all ingredients in a large bowl. Mix well.

  4. Roll into 1" balls and place on pan.

  5. Bake for 12-15 minutes.

  6. To freeze let cool on pan. Remove grease under meatballs and freeze on pan overnight. Store in zipper bag and reheat in oven or microwave when ready to eat.

When I make the meatballs we usually have Spaghetti, just because it is such an easy meal to make and I’ve already spent time making 3 pounds of meatballs! There is usually enough left to freeze for numerous future meals. We will be using some as we continue to work through stocking our freezers but probably not all of them. So I’ve included some other meal ideas below.
